Curry Fish Head is next on the bucket list 😄😄😄 Ingredients:
1 fish head (snapper or cod), cleaned and scaled
4 tbsp oil
3-4 cups water
200ml coconut milk
4 tomatoes, quartered
10 okra/ladies finger
1 Brinjal/eggplant + 5 mini Brinjal

Blend finely:
10 shallots
10 cloves garlic
2 inches ginger

Mixed with 4 tbsp water to form a paste:
2 Tbsp Coriander powder
2 Tbsp Kashmiri chilli powder
1 Tbsp Turmeric powder
1 Tbsp Cumin powder

From my many travels to India, I've made a lot of friends, experienced their culture, their food & cooking tips.
So off I strutted to Mustafa & came back happily with loads of spices.

The result?
A happy man & some disgruntled kids as they couldn't handle to spiciness of the dish. 😄😄😄 Ingredients
For the chicken
800 gms deboned chicken
1 Tbsp Ginger paste
1 Tbsp Garlic paste
1 Tbsp Kashmiri chilli powder
Salt to taste
Oil to pan fry

For the gravy
600 gms  roughly slit tomatoes
200 gms roughly cut onions
1 Tbsp garlic paste
100 gms cashew
1 tbsp kasoori methi (dried fenugreek leaves)
1 tbsp garam masala
1 Tbsp sugar
1 Tbsp kashmiri chilli powder
1 Tbsp butter
1 Tbsp cream
1 Tbsp Asam (Tamarind) paste
Salt to taste
