4 sticks of delicious yakitori and 4 selections of unique whiskey. Every combination hits the right "button". It was my first time for whiskey pair. Hope that there will be more restaurants provide such pairing.

Among all the egg tart I had, this $1.40 egg tart really hit the sweet spot. Creamy egg custard, buttery crust and hint of the eggy flavor. If only they start selling HK milk tea, I would really feel like "home" .

Other choice like their char siew bun and chicken pie were pretty good too.

Totally revenue of the entire and serving up katsudon which was less than $15. Super tender pork and chicken with basic season and wrapped with the golden bread crust.

My first WHALE meat! Being the biggest mammal in the world, its flesh was rathe irony. Together with some grained ginger removed any fishy taste and boasted the taste. Can't wait for my next opportunity to try them out again.

My favorite meal During my fukouka trip. The tuna absorbed the mirin, soy sauce and rice wine. Turned its flesh and fat into this plate of ultimate goodness. Picking up the bone and trying to suck in all the delicious juices. .

The local regular stall inside the fish market. Direct purchase seafood from the fish market which ensured a lower ingredient cost and 100% freshness. .

For only ¥850, we got one piece of saba, mentaiko and other sides. Just by the mentaiko itself, we could finish a bowl of rice! Sweet saba created a direct contrast to the over taste. Total satisfaction.

Grilled chicken heart, chicken gizzard, pork belly, sausage and meatball. I couldn't have one thing which was not nice. Smoky taste, salt and sauce based grill. Best with beer. .

Tonkotsu Ramen (¥800)
People actually visit to this place just to eat this ramen. Heavy and hearty broth which made it the best after drink finisher. A little oily but with a little drink, all is well!

The yatai which we wanted to visit was packed with local and tourists. So we looked for plan B. An eatery which was once a Yatai. Famous for their grilled food and half cooked chicken. .

Med raw chicken (¥800)
Sound super scary but japan is the only country I know which served it like this. Noticed the golden brown skin yet pinky meat. This required a lot of skill to achieve. The chef carefully cooked the chicken with a med heat charcoal which gave the chicken a smokiness as the chicken fat dipped onto the charcoal. The texture wasn't rubbery but similar to a super juicy chicken thigh. .

Grilled Steak (¥800)
This must be the juiciest steak I had. Together with the crispy cabbage and spicy yuzu pepper formed the ultimate combination. Every bite made me wonder where the juice came from!!!

Off the menu but constantly available. Marinated with soyu and mirin then topped with toasty sesame. Great contrast. If you were more advantageous, you could mixed in the wasabi. .

This was the one and only seafood eatery in the fish market. Really old school. They provided English menu with picture so no worry. You may walked pass this stall as their eatery is hidden on top. .

I love their miso soup. Small crab was found within which made it super sweet. Freshness is guaranteed and the pricing is pretty afforded. .

I went at 1200H and there was already a Q! People came from local and tourist queuing under hot just a taste of their handmade udon. After waiting for 45mins under a hot sun, it was finally my turn. The moment people stood into their stall, they would expect that your order in mind. However, this place didn't have an English menu, so I simply look around and point to whatever is serving out from the kitchen. .

They only served udon with tempura or beef or both. Very simple food. Sitting in front of the counter, looking at the grandmaster had knotting the dough then threw into the noodle machine. Flatten, sliced and tossed into the simmering water. .

After cooking for Ten minutes, took them out and washed with cold water. YES! They actually started washing. This washed away all the excess carbs which allow the soup to remain clear. .

I noticed a method they use. The udon soup poured into a bottle then warmed up in another pot of hot water. This helped to keep the broth as its ideal statue. .
|
Don't underestimate this bowl of udon. Every part of bowl has different taste. The beef part had a stronger and meaty based flavors. The spring onion part had a clean and hint of sweetness. The tempura had a clear taste, a reflection of its original flavor. Don't expect the udon to be springy but it was rather soft. So good. .

After 6 hours of flight and 2 hours of bus ride, we arrived at this corner of Japan, Nagasaki. I noticed this joint right outside the bus interchange and my echoed with their menu. .

Crisp vegetable with heavy seasoning of soy sauce and mirin. Because this place is designated for labor intensive workers, their dish was little saltier. .
