The fish alone is Β₯500 and cooking another Β₯300. On the fish, it was written caught by line fishing. At first I thought it would be over cooked but when my chop stick poked through the skin, immediately I underestimated their skill. The flesh itself was not starched by the soy sauce. They added cooking wine with mirin to bring out the savory of the fish. Very good. .

Tips: you can also order their boiled fish Set which ordered only Β₯1050. Super worth it as you will also be given one whole fish!

Similar to the champon noodle. They made the broth into gravy and deep fried a thinner noodle. It was similar to our singapore deep fried noodle but their was crispier.

Champon Noodle is an evolution of Chinese fried noodle. Pork, prawn, cabbage, carrot, black fungus and etc stir fried in high heat for the wok hei. Added in the pork stock to merge all the sweetness together then add in the noodle. .

Many ringer hut can be found in Japan. For the more authentic version, you may choose to visit the Chinese restaurants.

After the super long day of traveling, we decided to buy cooked food from the nearby walking street. Not exactly as a "cheaper" option but it fulfilled my little dream. Buying Japanese cooked dishes for dinner with beer!!!

Two pork chop for S$10!! So worth it! Only their appearance was not as beautiful as those which costed $20 over dollars. But this eatery smartly used pork belly (cheaper cut) to make this. .

After 6 hours of flight and 2 hours of bus ride, we arrived at this corner of Japan, Nagasaki. I noticed this joint right outside the bus interchange and my echoed with their menu. .

Crisp vegetable with heavy seasoning of soy sauce and mirin. Because this place is designated for labor intensive workers, their dish was little saltier. .

This piece of tasty steak aged had been aged for weeks then grilled till medium. For most aged beef, you couldn't expect the soft tender texture because most of the moisture had been drawn out. Chew slowly and enjoy the awesome beefy flavor.

The best mac and cheese I had so far! I love the idea that they used cast iron pan and laid the mac thinly to get this cheesy crust! πŸ˜‹πŸ˜‹πŸ˜‹

When we broke into the molten surface, the smell itself made was drooling. Simple ingredients but complex taste.

Newly opened HALA prawn mee at Toa Payoh. My dad and me were curious on how would they create the depth of prawn soup without using pork bone. .

When the bowls arrived, my dad gave the green light - Smell checked! Color checked! .

Our conclusion was that the owner used large amount of prawn shell, garlic and shallots to create the depth. It looked simple but required lots of skill to achieve this broth. Because the large amount of shallot and garlic might "burn" the broth if it was not control properly. .

They fried their own shallot for a better quality control. 100% fresh prawn from the market. 😍😍😍

One egg a day keep all the emo-ness away. Right sweetness and tasted like Christmas. However, the eggy texture wasn't constant. πŸ˜‹πŸ˜‹πŸ˜‹
