Brotherbird Bakehouse shouldn’t be much of a stranger for most whom are following the happenings within the local F&B scene throughout the years — some might even remember their previous existence as a cafe, while some would recall them being Stateland Cafe before they had made the change in their brand name as Brotherbird. Nonetheless, it has since been a while that Brotherbird Bakehouse had ceased their cafe operations — now being a brand that solely operates out of takeaway kiosks within shopping malls that offers a variety of croissants and mochi donuts; the latter being what they were famed for during its height of its cafe operations at Bali Lane. The CIMB Plaza outlet of Brotherbird Bakehouse had recently gotten a bit of a revamp however; it is now re-branded as a Brotherbird Chicken Sandwich location. There has been a bit of work being done to the stall which includes a more prominent signage, while the previous display cabinet has been reworked into a food preparation area for its chicken sandwich offerings. There is still an area that is dedicated for their croissant and mochi donuts which they still carry at their CIMB Plaza location — these are placed on a table at the side of the stall, while the menu at Brotherbird Chicken Sandwich now sees the offering of three (3) new croissant sandwiches that forms the new chicken sandwich offerings that are being introduced with the brand refresh.

With the chicken sandwich offerings being limited to the Italian Rooster, Spicy Rooster and the Signature Rooster, we went for the Signature Rooster — all three (3) chicken sandwich offerings are croissant sandwiches, and the Signature Rooster is described on the menu to come with elements such as light roasted chicken, roasted vegetable medley, tomato chili jam, mozzarella, cheddar and parmesan, as well as creamy garlic dressing. The Signature Rooster Chicken Sandwich comes double-wrapped almost in the same form as a burrito in silver foil ; the exterior being of one with a thicker layer. The chicken sandwiches at Brotherbird Chicken Sandwich is also served being sliced into half by default — much like what one would expect out of a Subway sandwich. Taking our first bite into the Signature Rooster Chicken Sandwich, we do feel that the croissant does feel a little bit flat — almost in a way that felt like it has gone through the panini press. Whilst there isn’t much of an issue in which how the croissant is being prepared as part of the chicken sandwich, though this also meant that the sandwich wasn’t holding up well with the runny elements that it came with — this was a very messy sandwich where the mix of tomato chili jam and creamy garlic dressing were consistently dripping out of the sandwich.

The combination of the tomato chili jam and creamy garlic dressing did however give the sandwich must of its flavour; a creamy, sweet and just very lightly savoury note that adds on to the lightly roasted chicken which comes plain as well as the roasted vegetables medley (comprising of leafy greens and tomatoes) — the lightly roasted chicken probably doing well for the health-conscious looking for their intake of protein. It is also worth noting that the lightly roasted chicken slices were pretty chunky, and provided quite a good bite. The mix of the three cheeses helped to add a stretchy and chewy texture to the sandwich; savoury without being overly salty, while the roasted vegetables medley adds a crispness from the leafy greens and a refreshing burst of tanginess from the tomatoes that balances out the other elements in the sandwich. At $9.50, the Signature Rooster Chicken Sandwich does work as a decently-sized sandwich for those whom are looking for a light lunch in the Central Business District; get tissues / wet-wipes by the side to standby though — it does get quite messy with the slices of tomatoes sliding around with things potentially falling out and dripping all around, though definitely works better than the more generic croissant sandwiches that some specialty cafes carry.
