Astonishing first course from yesterdayโ€™s lunch, and this was after two incredible snacks.
The massive Japanese oyster, which was poached to perfection in its own water, arrived in a pool of light comte cheese soup, surrounded by little islands of miso and pear purรฉe.
Itโ€˜s so scarily good I feared it would go downhill for the rest of the meal but that was not the case.
