Though initially I do not have high expectation cos tongue can sometimes be gamey and rubbery. But it completely blew my mind! This is so perfectly cured and brined for hours then shaved into thin sheets, the flavour and the tenderness was to die for! The richness of this succulent pile of meat is counterpointed by generous dollop of gribiche (hard boiled egg dressing) and a piquant tangy dijon mustard. Buttery house-baked brioche slices hug this divine concoction; the bread tender but not so airy that it sags beneath its beefy bounty. OMG! Everything was divine to greatness, I just died in Ox Tongue’s Heaven.
