[Chinatown] Lightly toasted buns, firm enough to support the burger, yet not too dense; the Burning Man ($20) having a spicy kick with the jalapeño relish and dashi mayo between wholemeal buns, while the umami-rich Fun Boy Three ($23) had its patty topped with roasted portobello mushrooms and a delicious garlic miso butter, held together by a demi brioche.
