The chef was sharing that it's like a tendon part near the inner shoulder. Texture wise it's like very soft konnyaku like.

Valentine's is clearly over BUT this "rosanjin" sukiyaki served with truffles and onsen egg was the bomb, lots of love going around with rich flavours and that creamy finish.
