This ain’t your usual Phad Thai! Instead of noodles, this version comes with copious amounts of egg instead. This reminded me pleasantly of super tasty fried carrot cake and plus points for this if you love pork lard (cause there’s lots and lots of that fried right in). Eat this with rice or piled onto the accompanying fried wanton skins though it’s a lot easier just crushing it into the dish.
