The search is over! THIS, beware is the best egg tart in Singapore (Prove me wrong otherwise). The egg & milk custard pastry from HK & Macau have never quite manage to be successfully replicated here. The recipe, unknown to me, must have leaked to this little coffeeshop! This is addictive and would put any dim sum makers here to shame... P.S. Egg tart test: 1. Hold egg tart between thumb and index finger of right hand. 2. Open palm below egg tart. 3. Flip egg tart over in a quick twist of the wrist. Test result: if the egg custard remains in the tart, discard immediately. It could be a egg agar-agar solidified in the pastry base. If the egg custard falls out, grab with left hand and lick it off. Too good to waste it!
