I timed this as well, waited for 30mins. Unfortunately I overshot by 5-10mins and the skin cooled off alr. However it's still a godly pastry

The slight saltiness of the glaze, and the sweetness from both the immaculately roasted massive chestnut and the sweet lashings on top all worked w the thin layer of pastry to create two bites of sheer perfectly.

Worth the wait, a must try and one of the few times in my life that I have the same sweet twice

Ps it comes out at 10am everyday, second batch is around 330pm
