I felt like this encompasses all the fav things in a SG Hokkien Mee I would look for:
• wok hei (I could smell it heavily walking past!! + look at the black specks hahaha. VERY EVIDENT)
• soupy zhup zhup the noodles swirl in
• yummy prawn stock sending waves of fragrant after another
• slivers of fatty meaty pork belly
• fresh lime (you’d be surprised. Some have really dry old ones)
• relatively shiok sambal chili (the prawn in this is def the prominent seafood body. Even though I sometimes thing the sharp fermented fish ones aren’t all bad). I guess I like those with some tints of sweeter onion. But the you-chang does well compensate for the lack of it
Don’t really have much expectations of the squid or prawn but the prawns in these are really sweet!! Surprisingly haha
