Having tried many "countries" before (as you may be aware, the brunch items in the menu here are named after them), I finally picked Scandinavia as I was in a mood for grilled salmon. It turned out to be a dish that left me with mixed feelings. Yes, the salmon was more than satisfactory, being juicy and all. But the rosti under it was much too crispy for my liking. The potatoes forming it were cut very fine and upon cooking, became too much like the type of potato straws snack that come out of a can. I reckon Marche's rosti beats this any day.
