Fook Lam Moon chose the best cut of the pork belly which had clearly defined layers of fat and leaner portions topped with a very crispy skin which gave a beautiful crackling and when served with homemade mustard, it was sublime! char siew had a good mix of the juicyfats and it matched our palates nicely.
