Fried Porridge - The base is first prepared using a special broth (cooked with dry cuttlefish and other secret ingredients to impart natural sweetness), then scorched over high heat (you can literally spot the towers of flame from the open kitchen) in a wok to develop some serious char.

The char kway teow was a heavenly aromatic mess of noodles, fish cake slices, beansprouts and pork lard with a couple of hum (cockles) thrown into the mix.

Braised Pork – the fat to meat ratio was perfect, and not too jelak. The tender pork was well marinated and well infused with the flavours of the braising liquid.

The Hae Ramen is a blend of Da Dong’s prawn soup and IPPUDO’s signature tonkotsu. Soaking up the broth are IPPUDO’s thin noodles, and the overall dish is completed with prawns, pork lard, bean sprouts and tamago.

The Sambae Stingray Rice Bowl with Onsen Egg - sees three pieces of stingray topped with a  liberal amount of house-made sambal sauce atop a bed of pearl rice, and accompanied with onions, sliced pickled cabbage and a wobbly onsen egg.

The noodles were pleasantly QQ and tossed in a fragrant, lard-laden sauce that was plenty vinegary with a touch of chilli.

Beef Kebab Wrap was quite the filling dish, stuffed with crisp lettuce, freshly-sliced tomatoes, olives and slices of beef.

Black Mee Sua Soup - The mee sua was not too soft, and the broth was very robust, with the VSOP adding a nice fragrance.

The Hainanese Chicken Chop — it’s classic comfort food and Ginger has managed to further elevate it. The grilled boneless chicken was amazingly juicy, tender and absolutely delicious, having been thoroughly marinated with the chef’s special sauce.

The Har Gao sported a thin crystal skin that encased fresh crunchy prawns, which everyone loved.

Butterburger - The 2 thick slabs of grass-fed butter sandwiched between the well-toasted potato buns made the burger a tad oily, but definitely enhanced the flavours, making the ensemble more fragrant.
