Temu is basically a type of ginger. For the broth, the chef uses two types of turmeric and herbs to prepare it then pour into a 70% cooked snapper served along with Marigold flowers, pomelo and three types of oil for drizzle. (Selom oil, fish oil and parsley oil) The fish was heavily seasoned and I didn’t get to enjoy it’s original flavour.

Tartare is made with smoked duck leg, chopped ginger, pickled radish, shallots and chili topped with pressed pumpkin. This is most likely my favourite among the meat course as it’s light, the smoky flavour was prominent yet not overly seasoned like other fermented dishes.
