The bread was crispy and fresh which was not a surprise, given that they are freshly baked everyday. The filling was generous and perfectly seasoned where combination of flavors and textures was absolutely divine. The meats were tender, the vegetables were crisp and the sauce was tangy. But what sets this bahn mi apart from others is the balance of flavors. It was not too salty, not too sweet and not too spicy. It was just right. It was the kind of sandwich that you could eat every day and never get tired of. Between you and I, I even ordered an extra serving for lunch the next day and it tastes just as good after a few minutes in the oven!

One of the standout offerings at this cafe is their watermelon cake ($12), a nod to the famous version served at Australia's Black Star Pastry. For someone who have had the chance to taste the original, I can confidently say that the version served at this cafe is not too far off. Although I found the watermelon a little too moist to pair with the layers of sponge and cream, it brought me back to the old days when I discovered the surprising combination of both watermelon and cake.

As for the Classic Eggs Ben, you can choose between smoked salmon or turkey ham (we highly recommend the salmon) to go with their poached eggs, hollandaise sauce and rosemary lemon sourdough. The poached egg was done to perfection and splitted gracefully when we cut it open. The hollandaise sauce was also sweet and umami, a perfect complement to the sourdough which may be otherwise hard to have on its own. The bread was quite toasted and crunchy but I would have preferred it to be fluffier and soft.

While it is newly renovated, the store maintains its rustic interior design - with old school floor and wall tiles, thick marble slab and traditional tables and wooden chairs. The cafe serves up nostalgic Kaya Toast with soft boiled eggs, and also old school savoury and sweet treats such as Luncheon Meat Buns and Chiffon Cakes. There are traditional Eurasian confections such as Cream Horns too!

Brawn and Brains Coffee has a carefully curated selection of roasted coffee and is no stranger to coffee lovers. Brawn and Brains Coffee East Coast spots a minimalist rustic interior - white-washed walls, brown tiles and with black furnishing. It has a bit of a similarity to their original cafe’s design - you can expect a cosy ambience.

The cafe is known for their artisanal bakes while also serving quality coffees and brunch food. Being a cafe in a HDB neighbourhood, the exterior of Niche Savoureuse stands out compared to the neighbouring stores. It is the only store with a beautiful rustic look - wooden storefront with large glass window. You can’t help but peer in to have a look at what is going on inside.

For drinks, we got the best of both worlds - Iced Matcha Goma Latte ($6.90++). Goma means sesame in Japanese, so you had a thick layer of black sesame at the bottom of our matcha latte. Being able to watch the tea master carefully brew our matcha definitely add to that sophisticated feelz and made us appreciate the tea as we slowly sip it. Although the sesame and matcha combination is something we would probably reconsider, it was a very aesthetic drink with different layers to it.

Our 5oz Flat White ($5) came filled to the brim with creamy goodness. As someone who is not a fan of dark, bitter coffee, this cup holds a good balance of velvety smoothness with just the right amount of milk - enough to taste the espresso, but creamy enough to not have an aftertaste.

With limited seating indoors, we picked a romantic spot decorated with fairy lights and flowers just outside of the cafe. It had a good ambiance and with a rotating bakes menu, there is something new to try each time.

The Nitamago Potato Salad is a sando with ramen eggs paired with homemade potato salad and truffle oil. The ramen egg yolks were runny and oozed out with a light squeeze, like an additional sauce for the potato salad. The potato salad was drizzled with the truffle oil, so the whole thing was extremely flavourful and melted in my mouth as I took a huge bite.

Steeped in cold water, the coffee has a mellow acidity and lingering sweet aftertaste. The cold brew is bottled and perfect for take-n-go, but if you are dining in, a cup of ice is provided to pour the cold brew into.

It was love at first sight as we split open the sando. Although sandos are already a trendy cafe food these days (and we see them on social media all the time), this sando looked deliciously refreshing! Its crisp green lettuce juxtaposed with the spicy red chicken was a good combination of healthy and yummy.
