This is authentic proper Kuai Chap/ Kuay Chup/Kueh Jup, whatever way you spell it). A robust peppery broth with Thai style curled-up kueh (white rice flat sheets that coil up naturally) is such a comfort food that warms you up instantly. The roasted pork, sliced pig's stomach and kidney gives you all the porky umami and texture to make this one of my favorite street supper of all times!
