Hawker Eats × Oyster Omelette 蚵煎 蚝烙 🦪🥚

One of the better orh luaks I’ve had in a while! The oyster omelette nails the smoky wok hei. The oysters were relatively huge, fresh, and plump, which made each bite juicy and rich. Loved the contrast between the crispy edges of the egg and the gooey, chewy starch batter. The chilli was tangy with a nice kick, cutting through the richness perfectly. Definitely worth the wait 》$5

Gooey soft chunks of tapioca starch and egg fried till crispy on the edges before adding in raw oysters for a quick fry. The ratio of egg and starch hits the right spot with the perfect balance of gooey-ness accompanied by fresh, huge and juicy oysters. The tangy chilli sauce served goes so well with the oyster omelette 》$7

Fried oyster omelette with large plump oysters. The omelette had a good amount of eggs and starch. The oysters were creamy, cooked separately from the omelette and a good match with the chilli’s sour tang 》$6

I like how this plate of omelette has substantial amount of eggs and not being overly starchy. However, I only eat the omelette without the oysters but my friends commented that the oysters were undercooked so all the oysters were left on the plate 》$3
