I felt like this encompasses all the fav things in a SG Hokkien Mee I would look for:
• wok hei (I could smell it heavily walking past!! + look at the black specks hahaha. VERY EVIDENT)

• soupy zhup zhup the noodles swirl in

• yummy prawn stock sending waves of fragrant after another

• slivers of fatty meaty pork belly

• fresh lime (you’d be surprised. Some have really dry old ones)

• relatively shiok sambal chili (the prawn in this is def the prominent seafood body. Even though I sometimes thing the sharp fermented fish ones aren’t all bad). I guess I like those with some tints of sweeter onion. But the you-chang does well compensate for the lack of it

Don’t really have much expectations of the squid or prawn but the prawns in these are really sweet!! Surprisingly haha

It’s a wonderful mala tasting savoury with all the natural aromatics you can find at the sauce bar ☺️

Wonderfully crunchy with the fried soy beans too.

Happy me with this sauce since my fam couldn’t take spice an didn’t order a mala.

This is Waaay better 😋🌶🌶🌶🌶🌶

Addictively aromatic from the umami earthy mushrooms, not too salty too!

I lowkey love the sauce bar aspect the most in the HDL dining experience !!!! 😁

They do have a knack in the craft of over the top fancy cakes!

Pink meringue kisses however came all melty and sticky in gloops

Tartly Sweet Raspberry compote spots in the delicate Rose cream and fluffy lychee sponge.

I thoroughly enjoyed this cake. Thought the baby sponge cube outer layer was very clever too!! No need for frosting/decor yet providing a fun texture and eating experience as it breaks up and multiply. + you don’t waste the space bits of extra sponge after trimming etc 😉

Sauce to noodles ratio was great!

Had no idea black bean paste could have such a distinct briny scent.

It was also the first to see that little boot of mustard be served alongside this dish

The kimchi mandu wasn’t memorable. Placid skin and mild tasting filling

But that spicy fried chicken is spicy! And all types of yummy crunchy

Erm. I thought I should get something less spicy to contrast the meal since my jjampong was 4 chilis signed. But I regret getting this cos, it was just plainly sweet syrupy.

I’ve had the spicy fried chicken before. And I’ll say, go for that!! It’s spice that hits you in the face, and all sorts of sweet and savoury together 😋🌶🌶

They do well with beautifully crisping the chickens. LOVE THIS BATTER. But for this flavour, it’s 6/10 for me.

With 4 chilli ratings for spice level, this was not too bad ☺️🌶🌶🌶🌶

Yet the umami from all that seafood shone through too (mussels, clams, sweet crab, mini octopus, whole prawn, plump oyster)

It was nice too that the noodles used didn’t go soggy easily. Retaining some chew through
