Japanese, RamenRamenFirst and foremost, I'll have to admit that I judge most Tonkotsu Ramens against my favourite Ichiran Ramen in Japan. Naturally that's a pretty high standard to meet. But ultimately if the ramen is a well-balanced one it's good enough for me :)
